About the role
We are seeking an experienced Sous Chef to join Gaia, a high‑end dining destination in London. You will support the Executive Chef in daily kitchen operations, uphold the highest culinary standards, and contribute to an exceptional guest experience.
Key responsibilities
- Assist the Head Chef with day‑to‑day kitchen management and staff supervision.
- Oversee food preparation, ensuring consistency, quality, and presentation meet brand standards.
- Manage kitchen stations, work service when needed, and maintain proper staffing levels.
- Handle ordering, inventory control, and cost‑management activities.
- Support menu development and maintain recipe consistency.
- Train, mentor, and develop junior kitchen team members.
- Monitor portion control, food waste, and uphold food safety and hygiene standards.
- Foster a positive, professional kitchen culture.
Required profile
- Diploma in Professional Cookery or equivalent experience (preferred).
- Minimum 5 years of professional kitchen experience.
- Strong knowledge of kitchen operations and food safety standards.
- Leadership experience in a high‑volume or premium restaurant environment.
- Excellent organisational and communication skills.
- Ability to work under pressure with flexible availability, including evenings, weekends, and holidays.
