Assistant Bakery Manager – London

About the role

We are seeking an ambitious Assistant Bakery Manager to join a fast‑growing bakery and retail concept in Central London. This full‑time, permanent position offers hands‑on experience across all aspects of bakery operations, from busy service periods to commercial analysis, with a clear pathway to Bakery Manager and eventually General Manager.

Key responsibilities

• Support day‑to‑day running of the bakery and retail floor, leading shifts with confidence.
• Maintain exceptional customer service, food hygiene, health & safety, and cleanliness standards.
• Assist with stock control, ordering, waste management and supplier relationships.
• Monitor labour, sales and operational KPIs, contributing to profitability and business performance.
• Handle customer feedback professionally and support new product launches, seasonal campaigns and local marketing initiatives.
• Coach, develop and inspire team members, fostering an inclusive and high‑performing environment.
• Participate in recruitment, onboarding, rota planning and performance management.

Required profile

• Previous experience as an Assistant Manager, Senior Supervisor or Shift Manager in a hospitality or retail setting.
• Strong commercial awareness and ability to analyse sales data.
• Excellent communication and leadership skills with a passion for hospitality.
