Head Baker – Lead Night Shift Team

About the role

The Bertinet Bakery in Bath is seeking a Head Baker to lead its night‑shift bakery team. You will oversee the production of artisan breads, pastries and cakes, ensuring the highest quality while maintaining an efficient workflow.

Key responsibilities

• Lead and develop the night‑shift bakery team, applying expert knowledge of bread production and dough handling.
• Collaborate with the Production Manager to drive product quality, consistency and production efficiency.
• Promote health and safety standards and uphold a strong food‑safe culture across the site.
• Identify opportunities to reduce waste, improve yields and boost overall bakery performance.
• Support staffing, team organisation and production flow to ensure smooth night‑shift operations.
• Maintain high bakery standards, good manufacturing practices and audit readiness at all times.

Required profile

• Extensive experience as a baker with deep knowledge of traditional artisan bread and pastry production.
• Strong leadership skills, capable of managing, motivating and developing a team of bakers.
• Reliable, organised and excellent time‑management abilities.
• Passion for the craft of baking and a drive for continuous improvement.
