About the role

Sommelier – Gaia Restaurant, London, the renowned Greek‑Mediterranean dining destination in Mayfair, is seeking an experienced and passionate Sommelier to join the team. You will elevate the guest experience, curate memorable wine journeys and share your knowledge with guests and colleagues while working closely with the Head Sommelier to maintain a high‑standard wine programme.

Key responsibilities

• Deliver exceptional wine service in line with Gaia Restaurant standards.
• Provide engaging wine recommendations and food pairings for guests.
• Support and lead staff training to build wine knowledge and confidence.
• Assist with stock control, cellar organisation and supplier coordination.
• Maintain a consistently high level of service and attention to detail.

Required profile

• Proven experience as a Sommelier or in a wine‑focused role within a high‑end or fine‑dining environment.
• Strong understanding of global wine regions and pairings.
• WSET Level 2 or above preferred.
• Confident communicator with a warm, professional presence.
• Passion for hospitality and creating memorable guest experiences.
