About the role

Jumeirah Carlton Tower is seeking an experienced Pastry Sous Chef to lead its pastry operations. The role involves creating innovative menus, managing the pastry team, and ensuring the highest culinary standards in a luxury hotel environment.

Key responsibilities

• Develop and execute seasonal menus using locally sourced ingredients.
• Lead, mentor and inspire the pastry kitchen team.
• Oversee daily kitchen operations, maintaining efficiency and consistency.
• Control food and labour costs through effective planning and waste reduction.
• Standardise recipes to ensure consistent taste, quality and presentation.
• Supervise procurement and inventory, maintaining optimal stock levels.

Required profile

• Extensive experience as a Sous Chef or Senior Junior Sous Chef in upscale or high‑volume kitchens.
• Strong leadership skills with the ability to manage a diverse team.
• Proficiency in cost control, recipe standardisation and overall kitchen operations.
• Passion for innovative cuisine and delivering exceptional dining experiences.
• Ability to perform under pressure with excellent problem‑solving and organisational abilities.
