Sushi Chef de Partie – Shanghai Me (London)

About the role

Shanghai Me is looking for a passionate Sushi Chef de Partie to lead the sushi section in its London restaurant. You will work with premium ingredients, maintain high standards of preparation and presentation, and support junior team members in a fast‑paced, high‑profile environment.

Key responsibilities

• Prepare sushi, sashimi, nigiri, maki and other Japanese dishes to the highest standards.
• Manage and organise the sushi station during service, ensuring consistency and efficiency.
• Assist with stock control, ordering and waste minimisation.
• Maintain food hygiene, cleanliness and organisation throughout the kitchen.
• Mentor and support junior chefs within the sushi section.

Required profile

• Previous experience as a Sushi Chef de Partie or a Sushi Demi Chef de Partie ready to step up.
• Excellent knife skills and strong knowledge of Japanese ingredients and techniques.
• Ability to thrive under pressure in a high‑volume, quality‑driven environment.
• Passion for sushi and commitment to continuous professional development.
