Brasserie Manager – South Bank, London

About the role

OXO Tower Restaurant is looking for an enthusiastic Brasserie Manager to lead the vibrant OXO Brasserie on London’s South Bank. You will be responsible for delivering outstanding customer service, driving profitability, and fostering a collaborative team culture in a high‑profile, river‑front setting.

Key responsibilities

• Oversee day‑to‑day operations of the Brasserie, ensuring service standards meet OXO’s brand expectations.
• Recruit, interview, and onboard new team members in partnership with HR.
• Identify training needs, deliver quality training, and maintain accurate training records.
• Conduct regular performance reviews, recognise outstanding contributions, and manage disciplinary and grievance processes.
• Collaborate closely with the Head Chef and Sous Chefs on menus, food sales, and service improvements.
• Ensure accurate cash handling, accounting procedures, and compliance with liquor licensing legislation.
• Maintain daily management logs, communicate operational updates, and suggest improvements to senior management.
• Uphold health, safety, and risk‑assessment standards for staff, customers, and suppliers.

Required profile

• Proven experience managing a restaurant or brasserie team in a fast‑paced environment.
• Strong leadership and people‑development skills, with a track record of recruiting and training staff.
• Excellent knowledge of UK hospitality legislation, including liquor licensing and health & safety.
• Ability to analyse financial performance, control costs, and drive profit.
• Effective communication skills and the ability to work closely with kitchen and front‑of‑house teams.

Required skills

• Proficiency with computerised restaurant management systems (POS, scheduling, reporting).
• Competence in cash handling and basic accounting procedures.
• Familiarity with liquor licensing regulations and compliance requirements.
