About the role

The Restaurant Director will lead the One&Only The Palm Dubai dining venue, ensuring every guest receives an exceptional experience while meeting financial and quality targets. This senior position combines operational oversight, team leadership, and close collaboration with the executive chef.

Key responsibilities

• Achieve revenue, average check, and cover targets through operational marketing and menu engineering.
• Manage food & beverage cost budgets, inventory, and merchandise stocks, ensuring optimal turnover of supplies and equipment.
• Maintain compliance with YAG and One&Only standards, including HACCP hygiene procedures and quality controls.
• Oversee guest preference tools and ensure accurate communication with the executive chef and restaurant managers.
• Lead human‑resources activities: real‑time staffing needs, recruitment support, schedule management, training, internal promotions, and performance evaluations.
• Conduct weekly team meetings, daily briefings, and coordinate with the executive chef on service delivery.
• Report any operational issues or damages promptly to supervisors.

Required profile

• Passion for French gastronomy and alignment with the values of reactivity, respect, equity, engagement, and responsibility.
• Proven experience in managing upscale restaurant operations and leading large service teams.
• Strong financial acumen and ability to drive profitability while maintaining high service standards.
• Excellent communication skills and ability to work closely with culinary and corporate partners.
