Restaurant General Manager

About the role

The Hoxton Edinburgh, its first hotel in Scotland, is looking for a passionate Restaurant General Manager to lead its Italian trattoria Patatino. Reporting to the Director of Food & Beverage, you will manage the restaurant and its team and deliver an exceptional guest experience. The property sits in the West End across 11 Georgian townhouses.

Key responsibilities

• Lead a dynamic front-of-house team in Patatino, keeping the floor energetic and ensuring guests leave wanting to return.
• Drive revenue and covers through smart, creative activations such as brunch moments, neighbourhood pull and late-night energy.
• Take ownership of the P&L and the restaurant's costs, finding efficient solutions while keeping quality high.
• Monitor revenue, spend per head and bookings using tools such as SevenRooms, and turn first-timers into regulars.
• Work closely with the Executive Chef to shape menus, flow and service that work commercially and feel effortless.
• Turn opportunities like packed nights, lunch rushes or new local partnerships into revenue.

Required profile

• A track record of leading large teams in restaurants, kitchens and bars.
• 2+ years' experience in a similar restaurant management role in a busy environment.
• Experience in budgeting and forecasting, with a strong grasp of the financial expectations of a restaurant and bar business.
• Ability to manage budgets daily, weekly and monthly and report results with a clear understanding of business trends.
• Attention to detail in a fast-paced environment and a passion for hospitality.
